Introducing Executive Chef Amey Rane
Artisan is delighted to welcome Executive Chef Amey Rane, whose philosophy reflects our own; honest ingredients, classically refined.

Originally from India, where food is deeply woven into family life and tradition, Amey honed his craft in kitchens across India and the USA before settling in New Zealand in 2010. Drawn to Wellington’s vibrant food scene, he joined Bolton Hotel in 2012 and went on to lead some of the capital’s finest hotel kitchens. We’re delighted to welcome him back as Executive Chef.

A style shaped by heritage, place and memory
Heavily influenced by Indian, Mediterranean, and contemporary New Zealand cuisine, Amey draws inspiration from seasonality, travel, and memory. His dishes may be inspired by nostalgic childhood flavours or something fresh from the market that morning.

Amey’s philosophy is simple: let the ingredient shine, guided by careful balance. He often champions New Zealand’s exceptional lamb and seafood, pairing them with fresh herbs, spice blends, seasonal produce, and a focus on using every part responsibly.

Think crispy fried chicken and a classic tiramisu, a cherished favourite he loves making at home, alongside show-stopping dishes like twice-cooked lamb rump paired with lamb croquette. Every plate celebrates bold flavours and exceptional ingredients, turning familiar favourites and sophisticated creations alike into unforgettable dining moments.
